Your oven is the one piece of equipment you can’t cheap out on or swap easily later. It shapes your pizza, your labor, and half your kitchen layout. Three main options, and they’re not interchangeable.
Deck ovens
The workhorse. Stone or steel decks hold heat and give you that crisp bottom. Great pizza, but they take skill — someone has to watch and turn pies. If you care about the product and you’ve got a decent hand on the peel, this is usually the pick.
Conveyor ovens
Load it on one end, a finished pizza rolls out the other. Consistent, forgiving, and you can train someone to run it in a day. The trade-off is character — the pizza’s fine, rarely special. Good for high-volume delivery shops where speed beats artistry.
Wood-fired
The showpiece. Blazing heat, leopard-spotted crust, and a dining room that smells incredible. But it’s a craft, it’s slower per pie, and wood, permits, and ventilation are their own headache. Right for a destination sit-down concept, wrong for a $10 delivery model.
Match the oven to the business you’re actually building, not the one you daydream about.
